The Flavours of Armenia website accompanies our book, namely "Flavours of Armenia".  It is principally written by me, Edda Ghazarian, in collaboration with my husband Ray and friend Mary-Clare.

The idea behind this project was not to produce just another cookbook but to explore the history and influences of the region upon Armenia's culinary past and present.

So, where is Armenia you may ask.  The country lies between Turkey and the Caspian Sea with Georgia to the north and Iran to the south.  Historically it was a much larger country than today and included Mount Ararat (landing place of the Ark) within it's borders.  Common culinary themes occur in this region for it to be known as Caucasian cuisine and consists of the traditional dishes from countries around the Caucasus Mountains, which includes Armenia.

The exact origins of Armenian dishes is difficult to trace, but straight away there are two strong influences to Armenian cuisine from Iran (the Persian Empire) and Turkey.

The Armenian diaspora refers to the communities of Armenians outside the Republic of Armenia. Since antiquity, Armenians have established communities in many regions throughout the world which in turn has had an influence upon their traditional dishes.
